Annodized aluminium from GSI outdoors, or cast iron from camp chef and old mountain.  These dutchovens are build for cooking over an open fire.  Whenever we start putting together our favourite dutch oven recipes, mouths start to water.  If you haven't tried cooking over an open fire with a dutch oven, then you haven't truly experienced camp cooking!
